Between working, exploring, and socializing, like many of us I don’t have a lot of time to cook. Furthermore, as a common hobby or skill among travellers, it is customary to find ways to stretch out your money as far as you can while still being healthy. Lastly, many people express concerns about being vegan as they believe a vegan diet can’t provide enough B12, protein, iron, and omega 3. Thus, here I present to you : “The Fall Back”.
The Fall Back
Ingredients:
- Canned Lentils
- Canned creamed Corn
- Salt
- Thyme
- Chia Seeds (3/4 cups)
- Canola Oil
Prep Time : 0
Total Time: 10 min.
Total Cost: 36 Argentinean pesos, $3.36 CAD
- Heat oil in a saucepan. You can tell it is heated enough when the oil can run down the pan easily.
- Strain the lentils, wash, and empty them into the saucepan. Add salt, and continue to cook and stir for around 5 minutes on medium heat until lentils soften.
- Stir in creamed corn and add thyme to your liking. Cook for another 3 minutes.
- Empty shepard’s pie on to a plate and sprinkle chia seeds on top.
Practical and healthy, in this dish you will get 32% of your daily needed protein, and 36% of your daily iron from the lentils alone. Also, the chia seeds provide an excellent source of omega 3. She isn’t the prettiest girl at prom, but this dish it is delicious and one of my “go to”s when I am travelling. The Fall Back. 🙂
